Blue Cocos Energy Balls

Ingredients

  • ¼ cup almond butter
  • ¼ cup shredded coconut (plus extra for coating)
  • ¼ cup hemp seeds
  • ¼ cup rolled oats
  • 2 pitted Medjool dates
  • 1 tbsp coconut oil
  • 1 pinch cinnamon
  • 1 pinch cardamom
  • 1 pinch pink sea salt
  • 2 scoops Elyxar Daily Superfood Complex
  • 1 tbsp unsweetened almond milk (optional, if mixture is dry)

Directions
Title
  1. Soak the dates in hot water for a few minutes to soften.
  2. Add all ingredients to a food processor and blend for about 5 minutes, or until dough-like.
  3. If too dry, add a splash of almond milk (1 tbsp at a time).
  4. Roll into 2-inch balls, then coat each ball in extra shredded coconut.
  5. Chill in the fridge for 20 minutes or until firm. Enjoy anytime you need a clean, energizing treat!

  • Use enough dates—they provide the stickiness and sweetness. If short, you can supplement with figs or dried cherries, but dates work best.
  • If mixture is sticky, rub a little coconut oil on your palms before rolling.
