Lemon Blueberry Chia Popsicles

Ingredients

  • ½ cup coconut milk
  • 1 tbsp chia seeds
  • 1 tbsp coconut nectar or raw honey
  • 1¼ cups plain Greek yogurt (2–5% fat preferred)
  • ¼ tsp vanilla extract
  • ½ cup fresh blueberries
  • Zest of 1 lemon
  • 2 scoops Elyxar Daily Superfood Complex

Directions

  1. Chia Layer: In a small bowl, stir together ¼ cup of coconut milk and chia seeds. Let sit for 20 minutes to gel.
  2. Blueberry Jam: Mash the blueberries and honey/nectar until chunky. Stir in lemon zest to brighten the flavor.
  3. Cream Layer: In another bowl, mix Elyxar, Greek yogurt, remaining ¼ cup coconut milk, and vanilla extract until smooth and slightly thinned.
  4. Layer the chia gel, blueberry-lemon mash, and Elyxar-yogurt into popsicle molds. Lightly swirl with a popsicle stick.
  5. Freeze for 4 hours or overnight. Enjoy your citrusy superfood pop!
