Oatmeal Date Bars

OMG, these Oatmeal Date Bars are freaking good—if you’re into chewy, nutty, naturally sweet bars that double as breakfast or a midday energy boost. Packed with fiber, healthy fats, and the full-body support of Elyxar Daily Superfood Complex, they’re easy to prep, no-bake, and totally addictive in the best way.

Ingredients

  • 1 cup rolled oats
  • 1 cup cashew nuts
  • 3 tbsp pumpkin seeds
  • 3 tbsp flax seeds
  • 2 tbsp chia seeds
  • 1 tsp cinnamon
  • ¼ tsp salt
  • 10 pitted Medjool dates
  • 2 scoops Elyxar Daily Superfood Complex
  • 2 tbsp coconut oil

Directions
Title
  1. Add cashews to a food processor and blend into a fine, flour-like texture.
  2. Add all remaining ingredients and pulse until a wet sand-like consistency forms (about 30 seconds). Mixture should hold together when pressed between fingers.
  3. Press evenly into a parchment-lined 20 x 20 cm brownie tin. Press firmly into corners.
  4. Refrigerate overnight to set.
  5. Slice into bars, and enjoy chilled or room temp.
